Breakfast: Mango Chia Pudding - Dana Dinnawi

chia-puddingIf your kids are used to having something sweet and milky in the morning, this pudding will be really easy to incorporate into their daily routine since mangoes are a favorite with young and old alike.

Ingredients

1 can coconut milk
3 TBS chia seeds
1 tsp vanilla
pinch of cinnamon

The night before, add all of the ingredients to a small pot and bring to a boil on medium heat, stirring the whole time. Turn the heat down and let it sit on the oven to cool down for 5 minutes. Put the chia pudding in a jar to cool and thicken overnight. (Or if you want a hot pudding on its own, consume it right away with a sweetener.)

I love mangos and have them a lot while they are in season. They go amazingly with the chilled chia pudding (as do figs) but you can use any fruit you prefer or a mix.

The next morning, cut up your mangoes into big chunks in your serving bowl. Add the chia pudding on top and it will seep through to the bottom. Serve and enjoy!

You can add shredded coconut flakes on top; or chopped nuts as well.
