Your kids don’t even have to know that you substituted their favorite wheat pasta with gluten free brown rice pasta. As a general rule of thumb, when you tell your kids you’ve made them something healthy, they automatically reject it. So keep them thinking this is the same pasta you’ve always made for them before.
Ingredients
1 large onion chopped
2 garlic cloves finely chopped
1 kg minced meat
6-8 medium tomatoes chopped
6-8 medium mushrooms chopped
2-3 colored bell peppers chopped
2 TBS olive oil
1 tsp cinnamon
Salt
Pepper
Oregano or Thyme
Parmesan cheese (0ptional)
1 package brown rice pasta
For the Veggie and Meat Sauce:
Add the olive oil, onions and garlic to a large pot on medium heat. You don’t need to preheat the oil, cook them all together. Once they start to turn golden, add the minced meat with the cinnamon. Stir continuously until the meat starts to cook through. Add the tomatoes, mushrooms, and bell peppers and cook until the mixture comes to a boil. Bring the heat down, cover and leave to simmer until the mixture turns thick and soft, about 15-20 minutes. At the very end add salt and pepper to taste and sprinkle with oregano or thyme.
Pasta:
While the sauce is simmering, cook the pasta according to the instructions on the package.
Serve the pasta into bowls and add the sauce and cheese (if using) on top. Enjoy!
